Irad Santacruz Arciniega is a leading figure in Tlaxcalan cuisine, promoting the recovery of traditional rural products and ingredients, as well as ancestral utensils. A born researcher, he is dedicated to promoting Tlaxcalan cuisine nationally and internationally through his Slow Food Tlaxcala Malintzi network. He is the most prominent figure in traditional Tlaxcalan cuisine. Irad Santacruz Arciniega is a renowned chef originally from Tlaxcala, born in 1981. His passion for cooking began at a young age during large family meals, where curiosity led him to become involved in preparing the traditional dishes his mother used to serve. Over the years, he decided to study gastronomy and pursue a specialty in Spanish cuisine abroad. However, despite his enthusiasm and determination, his training was not easy because Tlaxcala was considered a region of little culinary significance. This led him to become a researcher in 2006 to prove chef and researcher Sylvia Kurczyn and chef Ricardo Muñoz, director of the institution where he studied, wrong. The investigative challenge in his culinary career strengthened his culinary passion and vocation, complementing his passion that defines him to this day: understanding and sharing with the world the flavors, aromas, ingredients, and secrets of traditional Tlaxcalan recipes. His hard work led him to be recognized in 2016 as the "Ambassador of Tlaxcalan Cuisine" by the state congress, as reported by the Mexican website losrostros.com. He was also considered one of the 120 most prominent figures in Mexican gastronomy by the Federal Ministry of Tourism.​

​In addition to leading the Slow Food movement in Tlaxcala, Santacruz is the coordinator of the traditional cooks "Guardians of the Land of Corn" and the delegate of Tlaxcalan Cuisine at the Conservatory of Mexican Gastronomic Culture, a UNESCO Consulting Agency. This makes him a great promoter of gastronomic activity in his area. He is also a member of the Mexico Gastronomic Heritage Fund and manager of the Irad Santacruz Group, which disseminates, promotes, documents, and safeguards the state's customs and traditions. For years, this chef has traveled the towns of Tlaxcala to learn from their cooks the original recipes for dishes that stand out in Mexican cuisine, as well as others that are at risk of disappearing. He carries out these activities with great dedication to achieve the best interpretation of local cuisine with the approval of its original creators, who for years have kept the most unexpected secrets of their cooking.​

Background/el Fondo

Sobremesa foundation is hosting the event to support its upcoming 'New Farmer Incubation' program. It is a10-week paid internship program to provide immigrant, refugee, and historically underserved individuals with the tools, training, and infrastructure to succeed as small-scale farmers in Indiana. It combines classroom learning, hands-on fieldwork, and mentorship, all grounded in regenerative and culturally relevant agricultural practices. Proceeds from ticket sales will go directly toward launching the program in 2026.

Tickets include a 45-minute tour of the farm before dinner begins. Arrive at 5:00 to experience the fall atmosphere on the 9-acres of regenerative permaculture land at Sobremesa Farm. See where dinner's ingredients were harvested and learn about the practices that make them unique. The fam features a bicentennial barn, market gardens, orchards, two ponds, a pollinator zone, and a collection of chickens, ducks, and free range guinea fowl.  

Cuisine/la Comida

Dinner will comprise 4 courses: appetizer/aperitivo, salad/ensalada, main/plato principal, and dessert/postre. It will be prepared in the style of traditional Tlaxcalan cuisine and will feature seasonal ingredients sourced from Sobremesa farm as well as genuine Mexican spices sourced by chef Santacruz.

Each plate will be designed around the best ingredients that are available just prior to the event; A few example items that may be present include pumpkins, peppers, sweet potatoes, and corn. If you have any food allergies, there is an option to indicate so when purchasing the ticket so accommodations can be made.

Each course will be introduced by the chef before it is served, a cocktail will be available upon arrival, and additional drinks will be available for purchase.

Music/la Música

A live trio will be performing sets of traditional Mexican music between courses.

Tickets are $200 per seat, and can be purchased online at ticketleap.com.
Attendance will be limited to 50 places and must be reserved by Saturday, October 4.
